Fish Cakes /Cod Fish-Fritters

Fish Cakes /Cod Fish-Fritters , Love! Love! Cod fish fritters better known as Accra in Trinidad and Tobago. This is very good as an appetizer for big gatherings or intimate dinner parties, paired with a delicious tamarind or mango sauce. Oh yeah!
In Trinidad we would normally eat this along with some other type of bread or bakes on a Saturday for breakfast

Fritters, Fish Cakes, Cod Cakes  or Accra, whatever the name, they are very  good. This recipe is just my own version. All other  islands have their own unique version on making this dish, but they are all delicious.

I remember when I first met my husband he had never  eaten any type of salted fish before , but I didn’t know this until one weekend I was visiting and decided to cook something I was in the mood for,YES! you guessed it..Salted Codfish,but the trip to Price-Chopper and Walmart were a waste of time as either one carried it in their stores but after a 20 minutes of driving around searching for a supermarket,we finally found  Salted Pollock like the one posted here at a Hanna-ford supermarket. Bingo! Now I can have my fritters.

Ingredients

  • 24 ounces boneless salt fish/cod fish-(1 1/2 -pounds)
  • 1 medium onion, finely chopped
  • 6 cloves garlic, finely minced
  • 2 scallions, finely chopped
  • 5 Sprigs thyme, DE-stemmed
  • 4 sprigs parsley, finely chopped,
  • 4 sprigs cilantro, finely hopped
  • 1 finely chopped hot pepper
  • 3 cups all-purpose flour
  • 4 pimento peppers, finely chopped-(optional)
  • 1 tablespoon baking powder, plus 1 teaspoon
  • 2 eggs ( optional)
  • 1 1/2 cup water (add more or less as needed)
  • 1/2 tsp ground black pepper

Method

  1. Place the salt fish in a saucepan with 10 cups of water. Bring to a boil and let boil for for 18-20 minutes, Check the saltiness of the fish. It should be somewhat-salty but not overly salty.
  2. Rinse the fish under cold running water in a colander or mesh strainer
  3. Shred the salt fish with your fingers or a fork.
  4. Put all of the ingredients in a mixing bowl and stir vigorously until a thick batter is formed.
  5. Let rest for 10 – 15 minutes before you fry
  6. Heat your fry pan, then add oil and bring to 375 degrees
  7. Deep fry by teaspoonful’s over a medium heat, until golden brown.
  8. Avoid the outside of the fish fritters burning before the middle is well cooked by carefully monitoring the heat.
  9. Drain on paper towel
  10. Enjoy!

    My mother's family is from Nevis, but like many, I took many things for granted until she was gone. I have tried to replicate many of GMT favorite dishes, including hot sauce, "Peas and rice" and " fish cakes", and I have come to realize the subtle variations among Islands. This is especially true since I married someone from Jamaica, who prefers "rice an Peas". Anyway, my mother in law is the best, and sends me pigeon peas, and "salt-fish", as well as "bammy" and "festival mix". My question is about the salt cod fritters recipe on the "festival mix" box. I want to try it, love cornmeal in my "cod fish cakes", but think it might be a little sweet. Any thoughts?

      I tried cutting. Too sweet, not enough fish per fritter after "rising".

    These look like a really yummy app! I love that they are bite size and it's fish! A great way to get my kids to eat more fish without whining!

    looks good - one question - could i do this with any kind of fish? - i have hypertension - so the mere mention of salt in a recipe....

      Yes,you can do it with any fish,but this fish is boiled,so all the salt is basically boiled out anyway.

      you can soak it overnight, and squeeze lime in the water.you can even give it one round of boiling then soak . that would def cut down on the sodium
