Pumpkin Clover Dinner Rolls

December 21, 2017 By Debra LB. 1 Comment

These light and tender clover pumpkin dinner rolls are a great addition to your fall meal or any holiday menu.

Oh! How I love pumpkin, I eat pumpkin all year round, not like in the United States where most of their pumpkin are used as decorations for Halloween  or made into pies for the thanksgiving table.

These Pumpkin Rolls are super light and airy! Put three in a muffin pan and you have  cloverleaf rolls.

Making the yeast dough is really easy, even if you haven’t worked with yeast before! I recommend using Instant Yeast

Ingredients

  • Dough
  • 1/2 Cup milk (warm)
  • 2 Tbsp honey
  • 2 1/4 tsp active dry yeast (1 packet)
  • 3 Cup all purpose flour
  • 1 tsp salt
  • 1/2 Cup pumpkin puree
  • 1/4 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1 egg
  • 1/4 Cup unsalted butter, melted
  • Egg Wash
  • 1 egg
  • 1 tablespoon water

Method

  1. Heat milk to 115°F. Mix in honey and yeast. Allow to proof for 5-10 minutes. If it doesn't foam up, start again.
  2. Transfer dough to a large greased bowl. Cover with plastic wrap and allow to rise for at least 1 hour or doubled in size.
  3. Grease a muffin pan
  4. Cut dough in half. Shape one half into a 12-inch rope. Divide into 6 pieces and then each piece into thirds. Roll thirds into balls. Place three dough balls per greased muffin hole. Repeat with remaining dough.
  5. Cover loosely with a clean towel. Allow to rise an additional 30 minutes.
  6. Preheat oven to 350°F.
  7. Beat together 1 egg and 1 Tbsp water. Brush over rolls.
  8. Bake for 20 minutes or until centers reach at least 200°F.
  9. Cool in pan before removing to a wire rack or basket.
  10. Enjoy immediately or store in an airtight container

Notes

If using Mixer
Prepare stand mixer with dough hook attachment. Mix together flour, salt, spices, pumpkin, egg, butter and dry yeast together until dough pulls away from the sides of the bowl.

These look beautiful. I think there are several steps missing between steps 1 and 2 as far as how to prepare the dough. Can you update?
