Adobo Sweet Potato Soup

Heads up soup lovers. I’ve got something truly spectacular for you today.

There is this wonderful group over on Facebook called Food bloggers Recipe swap and Social Media. Just as the name implies,it’s a recipe swap group. In this group, each month we are assigned a blog and we have to cook and blog a dish from that assigned blog. I was assigned to Ali, who blog over at Fix Me A Little Lunch . Super wonderful blog!

There are so many wonderful dishes on her blog it was really difficult for me to choose one, but when I saw her Adobo Sweet Potato Soup recipe,it made it quite easy, as you guys know I’m a sucker for sweet potato and soups, so this was a dream in cooking heaven.

Now, I had to check my pantry and fridge for ingredients, and boy was I so lucky I had about 85% of the ingredients in house , now it’s time to put this recipe together.

But I did swap out a few things, I had no red onions or the adobo chili pepper, but I did have the adobo sauce, I did use my last chili a few days prior, but hey I used a small piece of smoked scotch bonnet with the left over adobo sauce , it was pure perfection

The end result of this soup was a nice smoky , velvety soup with just a hint of heat, the smokiness from the paprika and the adobo sauce made all the difference . So Good!

Saute Onions, Garlic, Celery and Pepper

sweet potato soup – with heavenly and earthly spices for a cold winters night or a brisk spring day or a comforting fall evening. Vegan and Vegetarian friendly

Ingredients

  • 1 tablespoon olive oil
  • 1/2 smoked scotch bonnet pepper , diced
  • 2 cloves garlic
  • 2 stalks celery, preferably with leaves, diced
  • 1/2 white onion, diced
  • 1 large sweet potatoes, peeled and chopped into small chunks
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1 pack vegetable seasoning powder
  • 3 cups water
  • Greek yogurt (optional) for garnish

Instructions

  1. Heat the olive oil in a medium sized saucepan. Add the scotch bonnet, celery, onion and garlic , saute until the celery and onion become soft. Add the sweet potatoes, smoked paprika, and salt and stir a few times. Add the water and bring to a boil. Add vegetable seasoning powder and adobo sauce.
  2. Reduce to a simmer and cook for 25 – 30 minutes or until the sweet potatoes are soft.
  3. Use an immersion blender or blender and puree to desired smoothness. Serve with a dollop of Greek yogurt or sour cream . Enjoy!
  4. Serves 2 – 3

    oh wow !!! Love the use of sweet potato here to make the soup as a main ingredient .........such a vibrant color of the soup here :)

    This soup looks so hearty and delicious and I like the addition of the chilli to spice it up. It would be the perfect lunch for the cold weather with crusty bread

    Sweet Potato is one of my favorite root vegetables and I love it in all forms! As chips, as fries, in a curry and now I've got a soup recipe for them too! Thank you for sharing :-)

    Thank you for sharing this one! I love the soup, too - it's always one of my go-to recipes for the winter. I love the addition of the other pepper.
