There is much more to Caribbean food culture than people outside of the region realize , most people think it’s all about pineapple and coconut and a lot of unhealthy greasy food, well I am here to prove otherwise. I grew up eating tons of fresh organic fruits even when organic wasn’t heard off, I never knew what canned beans were or what it was like to get rice in small packages or even in a box, I remember having to clean the rice and beans, meaning you had to pick out any dirty and foreign objects you found. Anyway this post is all about eating a delicious and healthy salad, more about my rice cleaning etc! in another post.

This salad is really good, especially if you get a really sweet watermelon.
This will make a great summer salad. Very fresh and vibrant and works well with the balsamic vinegar and the pomegranate molasses/juice.

A delicious Healthy Salad for you and your family

Ingredients
- Salad
- 8 cups baby spinach (one 6-ounce bag)
- 1 small red onion, diced
- 3 cups diced watermelon (placed on paper towel to drain excess fluid)
- 1 clamshell of fresh raspberries or strawberries (6oz.), optional
- 1 whole pomegranate De- seeded
- 1/2 cup pomegranate molasses
- 2 Tablespoon balsamic or pomegranate vinegar
- zest of one small orange
- 1 small minced shallot
- 1/4 teaspoon stone-ground mustard
- 1 /2 cup extra-virgin olive oil
- 1/2 tsp salt and pepper
Method
- Add dressing ingredients, from vinegar to salt and pepper, to pomegranate molasses. Whip. Set aside for flavors to blend.
- Place spinach in a large serving bowl.
- Top with onion, watermelon, raspberries/strawberries, and pomegranate seeds.
- Divide onto 4-6 salad bowls and drizzle with dressing.
Notes
This is a very delicious salad if you truly love pomegranate and watermelon, very healthy as well.
