Watermelon Pomegranate Toss Salad

January 11, 2015 By Debra LB. 9 Comments

There is much more to Caribbean food culture than people outside of the region realize , most people think it’s all about pineapple and coconut and a lot of unhealthy greasy food, well I am here to prove otherwise.  I grew up eating tons of fresh organic fruits even when organic wasn’t heard off, I never knew what canned beans were or what it was like to get rice in small packages or even in a box, I remember having to clean the rice and beans, meaning you had to pick out any dirty and foreign objects you found. Anyway this post is all about eating a delicious and healthy salad, more about my rice cleaning etc! in another post.

So enjoy this salad and let me know what you guys think after you have tried it or just tell me what you think of the ingredients combination. Healthy Eating!

watermelon SALADThis salad is full of B vitamin, folate,  vitamin A, and hefty doses of vitamin C, iron, magnesium, calcium, and antioxidants. It also is rich in lutein and zeaxanthin, two compounds shown to protect your eyes from vision loss. – watermelon.org

This salad is really good, especially if you get a really sweet watermelon.

This will make a great summer salad. Very fresh and vibrant and works well with the balsamic vinegar and the pomegranate molasses/juice.

Place watermelon on paper towel to absorb excess fluid. Place spinach in large serving bowl. Top with onion, watermelon, raspberries and pomegranate seeds. Divide onto four salad plates and drizzle with dressing.

It's summer in Australia and watermelons are everywhere up here in northern Australia. I LOVE this salad. I'd probably mess it up by putting goats cheese or feta in it. :) Lovely to meet you, Debra!
