Trinidad Green Seasoning

Every Caribbean island have their own unique marinade or seasoning. This one here is my version from Trinidad.

Serves 2 CUPS

Trinidad Green Seasoning

Ingredients

  • ½ bunch of Cilantro/Culantro or 8 leaves Chadobeni
  • 8 garlic cloves
  • 4 green onions (scallions)
  • ½ bunch parsley
  • 6 sprigs of fresh thyme , optional
  • 1/2 cup vinegar or lemon juice
  • 4 pimento peppers (optional)
  • 8 leaves of big leaf /spanish thyme (optional)
  • 1 knuckle fresh ginger (this is totally optional)
  • Food processor or blender

Method

  1. Peel, trim and wash the ingredients
  2. Then roughly-cut into smaller pieces so it’s easier to manage in the blender or food processor.
  3. For Food Processor:
  4. Add all the ingredients into your food processor if you have one . A few pulses, then a blend until completely blended.
  5. For Blender:
  6. Add all herbs plus the water and vinegar or lemon juice , give a few pulses and then a blend until smooth or add according to your discretion.
  7. Note:
  8. Use the white and green part of the scallions.
