The Perfect Trinidadian Cornmeal Porridge

Are you tired of the same old , same old , cream of wheat or even oatmeal  for breakfast?  Try mixing it up with this nice and hot  Trinidadian cornmeal porridge for a change. it’s  filled with Caribbean spices like cardamon, ginger, nutmeg and cinnamon with sweetened condensed and evaporated milk.

Every household or family have their own version and way of making this porridge, this is just my version which I love calling this porridge The Perfect Trinidadian Cornmeal Porridge because of the smoothness and the spice ratio combination, it’s just perfect.

Boil Cinnamon , Bay Leaves and other spices  for 10 – 12 minutes

The water will turn sort of brownish because of the cinnamon and other spices, so don’t be alarmed

The Perfect Trinidadian Cornmeal Porridge

Ingredients

  • 2 1/2 cups water, divided
  • 2 bay leaves
  • 1 cinnamon stick
  • 1/2 teaspoon ground cardamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup fine yellow cornmeal
  • 1/2 cup evaporated milk
  • 1/4 teaspoon butter or margarine
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract (optional)
  • Garnish
  • 1 teaspoon ground cinnamon for sprinkling on top

Method

  1. Pour 1 cup water into a saucepan over medium-high heat, add bay leaves and cinnamon stick, boil for 10 minutes.
  2. Stir in cardamon, nutmeg, ginger and salt.
  3. Meanwhile
  4. Pour 1/2 cup of cornmeal into a bowl, add 1 cup water to the cornmeal and stir well, set aside
  5. Once the 10 minutes is up. reduce the heat to very low and stir in the cornmeal mixture, whisking continuously for approximately 2-3 minutes to avoid any lumps.
  6. Continue stirring until mixture starts to thicken
  7. Add evaporated milk and stir
  8. Add butter and stir
  9. Add sweetened condensed milk and keep stirring and mixing until everything is combined together.
  10. Allow to simmer for approximately 2-3 minutes, stirring constantly.
  11. Taste and add more spices as needed
  12. Remove cinnamon sticks and bay leaves and pour into bowls
  13. Sprinkle with ground cinnamon and serve hot.
  14. Enjoy!

Notes

Notes For a different texture, toss in a handful of raisins, dried bananas or dried cranberries. A few pecans or walnuts can add some crunch to your porridge. I added, ground cinnamon, dried cranberries to my porridge ..Try it.

    This porridge is so delicious. Thanks for the recipe. I enjoyed this porridge on Saturday so much so that I decided I will have it on Monday but I need to modify it because of sugar . I hope that will still be yum.

    This porridge would be so lovely in the winter with all the beautiful spices added to it. I would love it with some pineapple compote on it.
