   Amazing Habanero Pepper Sauce

Who doesn’t like a good pepper sauce?  Well almost 20 years ago I would have said me.  I laugh now as I look at how my palate has changed over the years.  It started when I met the love of my life.  She grew up on the island of Trinidad and Tobago.  As our relationship progressed she introduced me to the lovely flavors of the Caribbean.  I grew up in central New York and was never exposed to much more than Italian and Chinese food.  Now don’t misunderstand me, I had a great childhood, I just wasn’t exposed to a lot.  Even as a young adult I was not to adventurous when it came to food.  Now I am like, let the adventure begin.  There are so many great flavors that come out of the Caribbean.

How times have changed.  Now when people are looking for pepper sauce, I am the one that gets the request.  This recipe is quite simple and can be very hot.  But boy ” So tasty.

One thing I have learned over the years is that the habanero peppers can vary in their heat intensity.   This recipe could produce two cups of pepper sauce.  The amount can vary mainly because of the size of the fruit (peppers) and vegetables.

So give it a try.  Enjoy.

Ingredients

  • 12 Large Habanero peppers.
  • 12 cloves of garlic - peeled.
  • 1 carrot peeled/chopped.
  • 1 large cucumber peeled/chopped.
  • 6 sprigs cilantro.
  • 4 tsp salt.
  • 1/2 cup fresh lemon/lime juice.
  • 2 tbsp white vinegar

Method

  1. Rinse all ingredients and place into blender and blend.
  2. Pour into a clean glass jar and refrigerate.

Notes

I use a Ninja kitchen system. First I used the large blender then poured the pepper sauce into the smoothie cups to blend to a finer consistency.

It should keep for up to 3 months or so, just add some extra vinegar and do not use any stainless steel spoons in it, use a plastic spoon.

Yes , you can use a food processor, this is a very hot pepper sauce recipe, you may use this sparingly in your dishes if you need some extra spice, or you can use in on your finished dishes for extra flavor.
