Growing up in Trinidad and Tobago there were always a lot of plantains, we ate them mostly boiled and fried, I remember spending time at my Aunt’s house in Freeport Trinidad, and waking up early in the morning to the smell of sweet plantains being fried and served with coconut bake and salt fish.
Nowadays, I don’t eat a lot of fry plantains anymore, I mostly baked, roast or grill my plantains now.
You should really try this recipe, after eating these plantains, you will never fry your sweet ripe plantains again, these plantains are so delicious and full of sweet cinnamon flavor, it’s just like a burst of sweetness in your mouth.
These plantains can be eaten by itself or as a dessert topped with some coconut whipped cream. It is great whichever way you have them.

A different way to prepare your plantains other than frying

Ingredients
- Plantains
- 2 large, very ripe yellow plantains
- ½ cup pineapple chunks
- Juice of one half of a fresh orange juice
- ¼ cup white or brown sugar
- ¼ teaspoon allspice (optional)
Method
- Preheat oven to 375 degrees.
- Mix together cinnamon, allspice and sugar, set aside
- Cut ends off unpeeled plantains, then split them the long way.
- Remove from peel and place right back onto peel
- Place plantains in a baking dish or baking sheet, skin side down
- Drizzle with orange juice
- Sprinkle with cinnamon sugar , 1¼ teaspoon per half plantain
- Bake until tops are nice and bubbly, about 20 - 25 minutes;
- Remove from oven, allow to cool for about 5 minutes
- Cut in one inch pieces or about 6 - 8 pieces per plantain half
- Add pineapple to plantains and serve.

Notes
You can use your favorite juice on the plantains, pineapple, passion fruit or even lemon juice etc! You can always save the leftover cinnamon sugar for another day. Pineapple can also be placed under your oven broiler sprinkled with some cinnamon sugar for about 1- 2 minutes before adding it to the cinnamon plantains, but it's all optional.
